Introduction

I adapted this recipe from one I found on Martha Stewart's website. I love it! I adapted this recipe from one I found on Martha Stewart's website. I love it!
Number of Servings: 4

Ingredients

    1/4 cup packed light-brown sugar
    1/4 cup olive oil
    3 tablespoons soy sauce
    2 tablespoons fresh lemon juice
    2 tablespoons water
    2 pounds salmon fillet

Directions

Makes four 8 oz. servings.

Directions

1. Preheat oven to 400 degrees. with a rack in the center. Make the glaze: In a small bowl, stir brown sugar, olive oil, soy sauce, lemon juice, and white wine until the sugar has dissolved.
2. Cut salmon fillet into 4 equal-size pieces; arrange, skin side down, in a single layer in a baking dish. Pour glaze over the fish, and turn to coat evenly.
3. Bake until fish is opaque but still bright pink inside, basting every few minutes with glaze from baking dish, 15 to 20 minutes.

Optional: After the fish has finished cooking, put it under the broiler for 3-5 minutes to make it a little crispier (but still juicy).

    Incredible!
Mmmmm, this is yummy and very easy to make! I used only half the salmon to make four servings, three ounces is enough for us! - 2/26/13
