Introduction

Very hearty warm soup easy to make in a crock pot. Very hearty warm soup easy to make in a crock pot.
Number of Servings: 10

Ingredients

    I # dried lima beans
    1/2 cup pearled barley
    1 large onion chopped
    3 or 4 cloves garlic chopped
    1 cup chopped carrots
    1/3 chopped sweet red pepper
    1 cup fresh mushrooms or 1 large can
    1 cup chopped kale
    1 bouillon cube- vegie or chicken
    1 T olive oil

Directions

Sort beans and wash.
Put in slow cooker and cover with water.
Put on high and start cooking if you are going to be gone all day move to low after it becomes hot.
Rinse the barley and add it.
Be sure you have lots of water in your cooker.
Let cook 3 or 4 hours.
Then chop onion, carrots, garlic, pepper, and mushrooms and saute in the olive oil.
Add vegies and bouillon to the cooker.
Let cook and hour of so.
Chop the kale and add to cooker.
Let cook for 30 minutes to an hour.
Makes 10 to 12 servings.
