Ingredients
-
~20 oz 93% lean ground turkey
~1 chopped onion
~ 1 bell pepper, chopped
~2 carrots, sliced
~6 c. beef broth (low sodium is better)
~1 Tbsp chili powder
~1 tsp cumin
~1/2 tsp oregano
~1 tsp Worcestershire sauce
~1 can diced tomatoes
~8 oz whole wheat elbow macaroni
~Salt to taste, Tabasco to taste
Directions
Brown the turkey in a soup pot. Drain any extra fat.
Add the onions, pepper and carrots and saute until transparent.
Add the herbs, tomatoes and worcestershire sauce, then the broth and bring to a boil. Reduce the heat to a simmer, cover, and cook for 10-15 min.
Raise the heat to a boil again, add the macaroni, and cook until the pasta is tender.
Add salt if desired -- I think the beef broth gives enough salt though! If you're into spicy, spike the soup with a teaspoon of Tabasco sauce, or let folks garnish their own.
Makes 8 servings.
