Introduction

Number of Servings: 12

Ingredients

    3/4 Cup Sugar ( I used organic pure cane sugar)
    .5 cup unsweetened sauce
    .5 cup Eggbeaters (equals 2 eggs)
    3 to 4 ripe, mashed bananas
    .5 teaspoon salt
    2 tablespoons light sour cream ( or plain yogurt)
    1.5 teaspoons vanilla extract
    1 to 2 teaspoons of cinnamon depending on your taste
    1 cup whole wheat flour
    1 cup quick oats

Directions

Mix together the apple sauce and sugar together, then add eggs.
Add the smashed, ripe bananas, sour cream, and vanilla.
Follow with the dry ingredients, the flour, salt, baking soda and Oats. Use muffin liners or spray the pan with non-stick spray.

Makes 12 Muffins, bake at 350 for about 25 minutes. Can make in a loaf pan and bake for 1 hour.
