Ingredients

    1 lb lean ground beef
    1 lb package of frozen broccoli and carrots (can use fresh veggies as well)
    1 tbsp brown sugar
    1/2 tsp ginger
    1/8 tsp pepper
    2 cloves garlic minced
    8 ox pineapple tidbits drained, reserving juice
    2 tbsp soy sauce
    1 tbsp apple cider vinegar (or other vinegar)
    1 tbsp cornstarch
    3 tbsp water

Directions

Cook meet then drain. Add vegetables, brown sugar, ginger, garlic, pepper, reserved pineapple juice, soy sauce and vinegar and stir well. Bring to a boil. Reduce heat and cover skillet. Simmer for 6 minutes until vegetables are crisp and tender. Add pineapple and stir. Combine cornstarch and water in a small bowl and stir until smooth. Add to skillet. Cook and stir until sauce thickens. Serve over rice or noodles.

Makes about 8 portions of 3/4 cup.

    Just OK. It does need a lot more flavor. I added some hot pepper to spice it up after tasting it and used round steak instead of ground beef. - 1/5/11
