Introduction

I mixed and adjusted some recipes to meet my needs. I mixed and adjusted some recipes to meet my needs.
Number of Servings: 6

Ingredients

    1 small uncooked butternut squash, peeled, seeded, and cubed (1") (about 3 cups)
    1 medium carrot, sliced
    1 stalk of celery, sliced
    1 medium onion, chopped
    2 raw medium potatoes, cubed (1")
    2C Swanson (no sugar) Cooking Stock, Beef, or 14 oz. can any broth
    juice of 2 oranges
    salt and pepper to taste

    1/4 C plain nonfat yogurt

Directions

Prepare vegetables. Add broth, OJ, and salt/pepper. Bring to a boil then simmer till veggies are tender (about half hour, or use crock pot and finish up later). Add yogurt and blend in batches by desired method (blender, food processor, stick blender) till smooth. Serve hot.

Makes 6 1-cup servings.
