Introduction

Ingredients

    1 1/4 c. all-purpose flour
    1/4 c. flax meal
    1/4 c. oat bran
    1/4 c. wheat germ
    1 1/2 t. baking powder
    1 1/2 t. baking soda
    1/2 t. salt
    1/2 t. ginger
    1/2 t. cinnamon
    1/4 t. nutmeg
    1 c. pumpkin
    1/4 c. brown sugar
    1/4 c. egg beaters
    1/2 c. unsweetened applesauce
    1/4 c. chopped dates
    1/4 c. raisins
    1/4 c. walnuts
    1/8 c. sunflower seeds
    1/8 c. pumpkin seeds

Directions

Preheat oven to 350F and spray a muffin pan with nonstick cooking spray.

Combine flour, flax meal, oat bran, wheat germ, baking powder, baking soda, salt, ginger, cinnamon, and nutmeg in a large bowl.

In a separate bowl, combine pumpkin, sugar, egg, and applesauce. Stir in dates, raisins, nuts, and seeds. Add wet mixture to dry mixture and stir until just moistened.

Spoon mixture into the muffin pan evenly. Bake for 23 minutes. Cool for 5 minutes before removing to a wire rack.

Serving size 1 muffin, makes 12 servings.
