Number of Servings: 2

Ingredients

    1/2 cup salsa
    2 tbsp reduced fat sour cream
    1/2 tsp avocado oil
    1 small onion chopped
    2 cloves garlic mined
    8 oz lean ground beef
    1 large plum tomato diced
    1/2 cup kidney beans
    1 tsp ground cumin
    1 tsp chili powder
    salt to taste
    4 cups romaine lettuce
    1/4 cup shredded reduced fat mexican cheese blend

Directions

combine salsa and sour cream
heat oil in skillet over med heat. add beef and cook until cooked through
add tomoato, beans, cumin, chili powder and salt, stir until the tomato breaks town (2 min). remove from heat, stir in 2 tablespoons of the salsa/sour cream mixture
add lettuce to the remaining salsa mixture and toss to coat.
split lettuce onto 2 plates, top with meat and sprinkle with cheese
enjoy!

    This was great! Definitely need to use Romaine or iceberg lettuce, I used mixed greens and they got soggy quick! But, everything still tasted great! - 8/24/07
