Number of Servings: 14


    3 Egg Whites
    2 Cups unpacked Brown Sugar
    2 Cups Grated Zucchinni
    1 Tbsp Vanilla Extract
    1 Cup Pumpkin or applesauce (used pumpkin)
    .5 tsp Salt
    1 tsp Baking Soda
    2 tsp Baking Powder
    3 Cups Whole Wheat Flour
    2 tsp Pumpkin Pie Spice or Cinnamon (used pumpkin)
    3 tsp Brown Sugar


Mix Eggs and sugar. Add Zucchini and Pumpkin. Mix well.
Mix dry ingredients in small bowl and add to Zucchini, Mix well.
Spray muffin bans and fill 3/4 full. Sprinkle topping on.
Bake at 350 for 18-25 minutes.
