Ingredients

Fantastic Sun-Ripened Tomato Polenta, entire box dry mix, approx. 7.5/8 cup, 170g
Polenta, dry, 2 1/2 cups
Stewed Tomatoes, Del Monte, No Salt Added, entire can, approx. 1 3/4 cup, 441 g, w/ K+ value
Mrs. Dash (R) Original Blend, 1 tbsp
Colgin Natural Hickory Liquid Smoke, 1 tsp
Fresh ground black pepper, 1/4 tsp
Water, approx. 8 cups
Directions
Mix all the ingredients in a microwave dish with an adjustable steamer openings on top.
If you use an open dish, change power from 100% to 50% when the water is visibly boiling. If you cook on full power for too long, the water will boil off easily.
Microwaved till thick but easily stirred, about 10 minutes on high in 5 minute increments.
Then microwave on 50% power - using the defrost setting will be the correct power. Cook for 5 to 10 more minutes. Check mixture at least every 5 minute increments.
Stop cooking when the mix is thick but still pourable. It will thicken so it can be sliced or spooned out in chunks as it cools. You can adjust cooking time so it is as thick or thin as you like.
You can add another cup of water and cook longer on 50% to arrive at a softer polenta.
