Introduction

These are very moist fluffy cookies. These are very moist fluffy cookies.
Number of Servings: 38

Ingredients

    1 cup cooked or canned pumpkin
    1 cup sugar
    1/4 cup canola oil
    1/4 cup nonfat plain yogurt
    1 egg
    2 cups whole wheat pastry flour
    2 tsp baking powder
    1 tsp ground cinnamon
    1/2 tsp salt
    1 tsp baking soda dissolved in 1 tsp milk
    1 tsp vanilla
    1 cup (224 grams) semi-sweet chocolate chips

Directions

Preheat oven to 375 degrees F. Combine pumpkin, sugar, oil, yogurt, and egg. In separate bowl, stir together flour, baking powder, cinnamon, and salt. Add to pumpkin mixture along with dissolved soda and mix well. Stir in chocolate chips and vanilla. Drop by spoonfuls on cookie sheet. Bake for 10 minutes.

Makes 38 3-inch cookies.

    Soo tasty! My kids devour these every tie I make them. I use whole wheat pastry flour instead of all purpose and they're still very fluffy. Reminds me of my mom's pumpkin chocochip cookies she makes . - 1/7/09
