This is a great low carb meal - I make it once a week and pack it along for lunch with a saled. Very versatile - you could add all sorts of veggies or cheeses for some variations -- hope you enjoy! Ingredients

Egg, fresh, 6 large
Heavy Whipping Cream, .5 cup, fluid
Collards, 2 cup, chopped - I use freshly cooked
Cheddar Cheese, .5 cup, diced
Scallions, raw, 3 medium
Garlic, 1 clove
Bacon, 4 medium slices, cooked
Directions
Preheat yoru oven to 350 degrees, and grease an 8 or 9 inch pie pan.
Mix together the eggs and cream.
Dice and add all the other ingredients and add to the egg mixture until your greens are well distributed.
Pour into your greased pie pan and bake for about 60 minutes, or until a knife inserted in the center comes out clean.
