Mixed beans are beautiful to look at! I almost hate to cook them since they lose most of their color in the cooking process. Mixed beans are beautiful to look at! I almost hate to cook them since they lose most of their color in the cooking process.

Ingredients

    20 OZ BAG BEAN SOUP MIX
    WATER (I use the spice packet, but this is optional)
    4 T OLIVE OIL
    2 T EACH CUMIN, CURRY POWDER
    2 t each cinnamon, ginger powder
    1 onion
    4 cloves garlic
    1 t salt
    1 small orange

Directions

Soak beans over night, and rise before cooking. Cover beans with water and cook in crockpot for 5 hours.

When beans are ready, saute spices in oil for about 1 minute. Add chopped onion and saute slowly until brown. When onions done add garlic. Stir vegetable mixture into soup. Add zest of orange, and squeeze juice into soup
