Introduction

This is a quick, easy acts-like-its-filling dish. It's perfect for a singleton or, like I did, make it after my boyfriend got home from work with his own take-out from the great Italian spot in town. This is a quick, easy acts-like-its-filling dish. It's perfect for a singleton or, like I did, make it after my boyfriend got home from work with his own take-out from the great Italian spot in town.

Ingredients

    1/2 spaghetti squash (cut lengthwise)
    1/2 cup spaghetti sauce (store brand's fine)
    1/4 cup grated parmesan cheese
    1/2 cup water

Directions

Cut spaghetti squash lengthwise.
Remove seeds.
Place face down (skin up) in a baking dish with 1/2 cup of water.
Cover with plastic wrap.
Microwave for 8-10 minutes (9 1/2 was perfect in my microwave).
Remove spaghetti squash from microwave (it's going to be hot).
Take a fork and just remove the warm center from the skin -- it will look just like angel hair pasta. I put it in the bowl I was going to use to eat from (less to wash).

Measure out the spaghetti sauce and the cheese and mix together.
