A quick and very satisfying and authentic Mexican treat A quick and very satisfying and authentic Mexican treat
Number of Servings: 4


    2 C black beans
    4 small wholegrain tortillas
    8 tbsp salsa
    1 C chopped onion
    6 tbsp cilantro
    1 large chopped tomato
    1/2 C light sour cream
    1.5 C frozen corn
    1 tbsp EVOO
    2 C chopped broccolini


Brown onions in oil for 2 minutes or so and add chopped tomatoes, corn, beans, and chopped broccolini. Continue to cook for 5 minutes. Tortillas can be warmed in oven
(350 degrees) while vegetables are cooked . Place cooked filling on each of the 4 tortillas; sprinkle cilantro on each and top with sour cream and salsa. Finally, divide and sprinkle the mozzarella on top of each serving and enjoy.
