Introduction

from the Hodgson Mill Multi Grain Hot Cereal package. I followed the recipe as written, using soy milk and turbinado sugar. Ingredients

    Hogsdon Mills Multi Grain Hot Cereal, 1 cup
    flour, unbleached all-purpose, 1 cup
    Baking Powder, 1 Tbsp
    Baking Soda, 1/2 tsp
    Salt, 1/2 tsp
    sugar, I used turbinado, 1/2 cup
    Carrots, raw, 1 cup, grated
    Apples, fresh, 1 cup, peeled & chopped
    milk, I used 8th Continent Original Soy Milk, 1/2 cup
    Egg, fresh, 2 large
    Crisco Pure Vegetable Oil, 1/4 cup
    Vanilla Extract, 1 tsp
    Pecans, 1/2 cup, chopped

Directions

Preheat Oven to 400ºF

Line 12 muffin cups w/paper liners or grease muffin cups. (I used liners)

Blend together dry ingredients.

Add remaining ingredients and mix until blended with a fork.
Batter will be THICK.

Spoon into muffin cups. I filled them full, so used all of the batter. They don't rise all that much, so doing it that way must have been the way I was supposed to :)

Bake 20-22 minutes or until golden brown.
