Ingredients

2 cups cooked Basmati Rice
1/2 medium onion, diced
3 oz cooked shrimp
2 large eggs
1/2 tsp garlic
2 tbsp olive oil
1 tbsp sesame oil
2/3 cup frozen mixed vegetables
1 tbsp soy sauce
Salt to taste
Frank's Hot Sauce if desired and to taste
Directions
* In a large skillet, sautee garlic and onion in 1 tbsp of olive oil until translucent
* Remove and set aside
* Beat eggs and lightly fry in the skillet without adding additional oil - season lightly with salt while cooking. Then set aside
* In the same skillet, add sesame oil and sautee frozen mixed vegetables and shrimp lightly until heated
* Now add eggs, onions/garlic and mix thoroughly
* about a half a cup at a time, add the rice to the shrimp and vegetables and mix well
* Add the last tbsp of olive oil and soy sauce and toss until everthing is well mixed and heated
* Add hot sauce and mix if desired
* Serve as a side-dish or a main course - makes 6 1-cup servings
