I found this recipe on a blog and it is amazing! I think I would play with the spices a little bit next time...I like the cinnamon taste to be a little stronger than it was. Ingredients

    1/4 cup steel-cut oatmeal (quick-cook or regular)
    3/4 cup water
    1/4 cup pureed pumpkin
    1 tsp cinnamon
    1/8 tsp cardamom
    pinch cloves
    pinch nutmeg

Directions

Cook oatmeal in boiling water according to package directions. Add pumpkin and spices to taste. Heat through and serve. Toasted almonds, pecans, or walnuts are excellent on top, but are not included in the nutritional information. Serves 1.
