Ingredients

1 dozen eggs
red pepper
diced tomatoes or pico de gallo salsa
non fat milk (skim)
spinach, fresh
bread
sliced ham lunch meat
mozzarella cheese
Kraft three cheese blend
salt, pepper and Mrs Dash Tomato Basil
Directions
Spray large muffin tin (pan that serves 6)
Cube bread and divide equally
In a large bowl add 9 egg whites and 3 whole eggs.
Beat and add milk, Mrs Dash, and salt, pepper to taste.
Ladle in mixture to muffin tin.
In a skillet brown diced onion and red pepper.
When onion and red pepper are fork tender add spinich for one minute - you just want to wilt the spinach.
Add equally to muffin tin.
Add diced ham, tomatoes or pico de gallo/salsa and cheese to muffin tin.
Individually gently mix ingredients in each tin.
Finally sprinkle Kraft 3 Cheese blend to tops.
Bake for 20-25 minutes in 375 degree oven. Test with a toothpick to be certain that it is done. Enjoy!
