Introduction

Hearty and slightly spicy, this soup will warm you up on a chilly day. Hearty and slightly spicy, this soup will warm you up on a chilly day.
Number of Servings: 12

Ingredients

    dried black beans, 4 cups
    chicken stock, home-prepared, 12 cups
    carrots, raw, 2 large
    celery, raw, 2 stalk, large
    mushrooms, fresh, 2 cup, pieces or slices
    diced tomatoes & green chilies (RoTel)10oz can
    2 bay leaves

Directions

Soak black beans overnight, or use the quick-soak method. Rinse after soaking. In 6-7 quart crock-pot, add black beans, chicken stock, diced carrots and celery, and bay leaves (I do not crumble, just add whole). Cook on low for about 4 hours. Add mushrooms. Cook another 3-4 hours. Add one can of Rotel tomatoes. Heat and serve. Fills crockpot about 3/4 full. Serves about 12.
