Ingredients

    1 cup black beans, drained
    1/2 cup wheat bran
    1/4 cup whole wheat flour
    3/4 cup salsa
    1/4 cup nutritional yeast
    1/8 cup ketchup or tomato paste
    1/2 cup mushrooms, diced
    2 sprigs fresh parsley or other greens
    1/2 tsp ground cumin
    1/2 tsp chili powder

Directions

MIx all ingredients thoroughly. Add a little more or less salsa if needed for a thick consistency. All dried ingredients should be mixed in, and the mix should be about the consistency of refried beans.


Fry or bake, serve with your favorite garnish.

The nutritional yeast is typically found in the bulk section of natural foods sections of stores. It adds a ton of B-complex vitamins and a nice flavor that's reminiscent of cheese.

Wheat bran adds great fiber, and serves the purpose (with the flour & yeast) of binding everything together. Substitute other flours etc. if you prefer.

A variety of chopped veggies may be mixed in, not just mushrooms. Try celery, small bits of carrot (you'll want to partially cook them first), cooked beets, etc.
