Ingredients

    MAKES ENOUGH FOR 3.

    3 cans of tuna in water.
    2 tbsp of mayo or you can sub low fat mayo.
    1 large tomato, cut into six slices.
    3 english muffins, halved; I use sourdough.
    OPTIONAL: jalepeno peppers.

Directions

~Preheat your toaster oven to 400 degrees.

~Cut the three English muffins in half.

~Mix the tuna and mayo together. Optionally, you can add jalepeno peppers. Pepper to taste. Distribute the tuna mixture evenly on each of the halved English muffins.

~Cut the tomato into six slices. Put one slice on top of the tuna on each of the English muffins.

~Toast them for 10 minutes.

This recipe makes 3 servings, two halved English muffins per serving.
