Ingredients

    1.5 T oil
    3 Cardamom pods
    1 Cinnamon stick, broken
    1 t cumin seeds
    2 c Onions
    20 oz ground beef
    1 T Curry Leaves
    3 Garlic gloves
    1 T Ginger
    1 t Fenugreek

Directions

Fry first spices in oil, then add everything but coconut milk, spinach and cilantro. Cook until beef is brown, then add spinach and cilantro. Cook until spinach wilts, then add coconut milk and cook 10 min or until sauce is thick.

    Very Good
    This is a really good dish, tho I'd use ground lamb instead of beef. If you don't have cardamon you can substitute 1/4 tsp cinnamon and 1/4 tsp nutmeg. Also, I added just a dash of honey to it. I like my food spicy and next time around I think I'll add some red pepper flakes. Serve over long rice. - 5/24/11
