Introduction

My grandmother taught me this simple, but yummy recipe. She used yellow mustard and a tsp of sugar. I eliminate the sugar by using the sweeter honey mustard. Ingredients

    1 dozen eggs, hard boiled, peeled & sliced in half
    1/2 c Hellman's light mayonaise
    2 tsp Honey Mustard
    1/2 tsp salt
    1/2 tsp pepper
    Paprika

Directions

Boil eggs. Drain. Chill. Peel and slice in half.
Gently flex the eggs to remove the yolk (place in mixing bowl).
Place the eggs on serving dish
Smash yolks into fine grain.
Mix mayo, mustard, salt & pepper into a semi-thick paste.
Place yolk mix by teaspoons into hollow of egg halves
Sprinkle lightly with paprika.
Keep refrigerated until ready to serve (should wait at least 15 minutes for flavors to meld together).

    Delicious! Thanks for the sugar tip; I didn't have any honey mustard. I also added about a tsp of horseradish and a tsp of chopped chives for spunk and color. Good stuff! - 8/2/08
