Super fast, easy, and tasty, this sandwich will fill you up right with protein, fiber, and whole grains. I've been eating these nearly every day for breakfast! Super fast, easy, and tasty, this sandwich will fill you up right with protein, fiber, and whole grains. I've been eating these nearly every day for breakfast!

Ingredients

    1 large egg
    1 wedge Laughing Cow light spreadable cheese (any flavor)
    1 Arnold's Whole Wheat Sandwich Thin (or similar thin bun)
    1 sm. handful spinach
    salt
    pepper

Directions

Pop the thin bun in the toaster. Scramble the egg in a small, microwave-safe bowl. Season with salt and pepper, and cook in the microwave for about 1 minute or until egg is set (be careful not to over cook!).

Spread Laughing Cow cheese on the toasted bun, and layer the spinach and egg patty on top. EAT!

Makes one sandwich.
