Introduction

This yummy egg based dish goes great with salad for dinner or whole wheat toast for brrunch! This yummy egg based dish goes great with salad for dinner or whole wheat toast for brrunch!

Ingredients

    *Needs a skillet that can go under the broiler
    6 eggs (Eggland's Best)
    14.75 oz cannned red salmon
    1/2 cup part skim ricotta cheese
    1 medium onion
    1 roma tomato
    2 Tbsp Canola oil
    2 Tbsp 1/3 less fat chive and onion cream cheese
    Fresh dill (optional)
    Lemon juice (optional)

Directions

Serves 8.
Chop onion and cook with the oil in a 12 inch skillet until nicely browned. Lower heat. Slice tomato into thin slices. Drain salmon and remove skin and bones. Sprinkle with lemon juice. Mix salmon, cheese and eggs and pour over onion. Cook until eggs just start to set. Place about 3 inches below the broiler and cook on high until fully set and just starting to brown. Don't walk away!! It only takes about 90 seconds to 3 minutes, depending on your oven. Spread cream cheese over fritatta while it's hot and sprinkle with fresh dill if desired.
