Introduction

Ingredients

    2 Tsp extra virgin olive oil
    1 medium onion, chopped
    3 shallots, minced
    4 cloves garlic, minced
    2 tsp dried thyme
    1 tsp dried rosemary, crushed
    2 C cremini mushrooms, quartered
    2 large carrots, sliced 1/2 inch thick
    1 pound beef stew meat
    1 -14oz. can crushed tomatoes
    1 C beef stock
    4 C thinly sliced Swiss chard
    1 Tsp red wine vinegar
    1 to 2 tsp sea salt
    freshly ground black pepper to taste

Directions

1. In a large skillet or pot, heat olive oil over medium heat. Add onions, shallots and garlic, saute for 5 to 7 minutes or until onions are soft and beginning to turn golden.

2. Add dried thyme, dried rosemary, mushrooms, and carrots; saute for an additional 5 minutes then add beef stew meat. Continue to saute for about 5 more minutes.

3. Add crushed tomatoes and beef stock, cover and simmer over low heat for 35 to 40 minutes stirring occasionally. Then add Swiss chard, red wine vinegar, sea salt, and freshly ground black pepper. Cover and cook an additional 5 minutes or until the Swiss chard is tender. Taste and adjust salt and seasonings if necessary.
