Introduction

Depending on how you like them - this recipe comes out more dry cake like then I'd normally prefer - might be the whole wheat flour. But they were still very good!! Ingredients

    1/2 C. Whole Wheat Flour
    1/2 C. All Purpose Flour
    1/2 tsp. Cinnamon
    1/4 tsp. Nutmeg
    1/2 tsp. Baking Powder
    1/4 tsp. Baking Soda
    1/4 tsp. Kosher Salt
    1/2 Stick or 1/4 C. Unsalted Butter
    1/2 C. Unsweetened Applesauce
    1/2 C. Brown Sugar, packed
    1 Large Egg
    1 tsp. Vanilla Extract
    3/4 C. Rolled Oats
    2/3 C. Craisins
    1/2 C. Chopped Walnuts

Directions

Preheat Oven to 350 Degrees - either spray 2 baking sheets with Non-Stick Spray or use Liners.

In a small bowl mix, whisk together flour, cinnamon, baking powder, baking soda, nutmeg and salt. In a mixing bowl, beat butter, applesauce and sugar until smooth. Add egg and vanilla until combined. Turn mixer off and add some flour mixture gradually, while mixing on low, until just combined. Stir in oats, craisins and walnuts.

Chill mix in fridge before cooking to ensure thicker cookies. If you don't do this they will come out more flat. 5-10 mins is fine.

Using a rounded tablespoon, drop cookies onto lined baking sheets about 2 inches apart. Bake 10-12 mins or until edges are brown. Cool on wire rack.

Makes 20 cookies.
