    Zucchini, baby, 2 large (remove)
    *365 Organic Quinoa, 1 cup (remove)
    Vegetable Broth, 2 cup (remove)
    Tomato Sauce, .5 cup (remove)
    Onions, raw, .25 cup, chopped (remove)
    Oregano, ground, 1 tbsp (remove)
    Parsley, dried, 1 tbsp (remove)
    Basil, 1 tbsp (remove)
    Ricotta Cheese, part skim milk, .25 cup (remove)
    *Spaghetti/Marinara Sauce (tomato sauce), 2 cup (remove)
    *Cheese, Shredded, Trader Joe's Mexican Blend, .5 cup


1. preheat oven to 400f
2. thinly slice zucchini into 12 "noodles"
3. remove moisture from zucchini by sprinkling with salt and pressing between paper towels
4. combine quinoa, oregano, tomato sauce, and broth nad let simmer for 20 minutes
5. add ricotta and herbs to quinoa mixture
6. poor 1/3 cup marinara on bottom of baking pan
7. lay 4 noodles across bottom of pan
8. layer 1/2 quinoa, marinara, zucchini, quinoa, mariana, zucchini, and then remaining marinara. Top with 1/2 cup of shredded Cheese.
9. Bake at 400 for 30 minutes!
10. Enjoy!
