Introduction
The Bircher muesli recipe I use and have for breakfast most morning. Vegan recipe although yoghurt on top is also lovely. If people don't love apples, orange juice is a nice change and any fruit can be used on top.I find this to be a very filling breakfast, which keeps me going for a long time. For people worried about sugars, the main areas to watch are the dried fruits, these can be omitted and replaced with extra fresh fruit if desired or different nuts and seeds.

Ingredients

Oats, 1.5 cup (just plain rolled oats)
Steel Cut Oats, dry, 0.25 cup (can be replaced with more rolled oats)
Almonds, .25 cup, Flaked
*LSA (linseed, sunflower, almond), 3 tbsp (optional for good oils and fiber)
Chia Seeds 5gm, 20 gram (optional same as LSA mix)
Cranberries, dried, sweetened (craisins), .125 cup
Brazil Nuts approx 6, chopped
Sunflower Seeds .125 cup, hulled (remove)
Pumpkin Seeds (hulled)(pepitas), .125 cup (remove)
Raisins, .25 cup (not packed) (remove)
Macadamia Nuts, .125 cup, chopped roughly
Apricots, dried, .125 cup, (diced up quite fine, about the size of the raisins)
Apple juice, unsweetened, 3 cup (1/2 cup per serve or to taste if this is too dry)
Apples, fresh, 3 medium, grated fresh
Directions
Makes 6 1/2 cup serves (approx)
Mix all dry ingredients together well.
Serve out a half cup serve into a bowl, add a half cup of apple juice and let sit over night (or at least 4 hours for the juice to be absorbed) refrigerated.
When ready to serve, grate half an apple over the top.
Different juices can be used to soak the muesli overnight, milk can also be added although that makes for a different taste. Yoghurt on the top is very good and a great way to add extra calcium and some protein.
You can substitute different nuts and seeds also for a different taste, hazelnuts and pecans, walnuts are all great in this mix. I have also used Goji berries and other dried fruits for a different flavour.
