Ingredients

For "powdered sugar":
1/2 C. non fat dry milk powder
1/2 C. cornstarch
1/4 cup splenda (or stevia works well too)
For Bottom Crust:
2 C. all purpose flour
1/2 C. powdered sugar mixture
1 C. margarine, softened
For Lemony Top:
4 large eggs
2 C. splenda
1/3 C. lemon juice
1 T. lemon zest from peel
1/4 C. all purpose flour
1/2 t. baking soda
Directions
Makes 24 bars - Each bar is a 150 calorie treat!
Preheat Oven to 350 degrees F.
Sift together cornstarch, non fat dry milk powder, and 1/4 cup splenda or stevia.
Combine 2 cups of flour with 1/2 cup of your powdered sugar mixture. Add 1 cup of margarine and cut into the dry ingredients with a pastry cutter until crumbly. Press mixture into a lightly oiled 13x9 baking dish. Bake for 25 minutes until lightly browned.
In a bowl, whisk together eggs, 2 cups of splenda, the lemon juice and zest. Add 1/4 cup of flour and 1/2 teaspoon baking soda. Whisk until all ingredients are blended and smooth. Poor mixture over bottom crust and bake for 25 minutes.
Cool completely before cutting into 24 bars. Sprinkle with remaining powdered sugar mixture. Enjoy!
