Sesame Beef Stir Fry
5 tablespoons soy sauce (I buy the low-sodium version)
4 tablespoons canola oil
2 teaspoons honey
2 teaspoons Dijon mustard (I have always just used plain yellow)
1 pound flank steak cut into thin strips (I usually just buy the beef already cut up as stir fry from the meat section at the grocery)
2 teaspoons fresh ginger, minced (I have used 1/4 teaspoon powdered ginger and it seems to work just as well)
2 tablespoons canola oil
2 garlic cloves, minced (I have also used the pre-minced garlic which comes in a jar to equal 2 cloves' worth)
1 medium onion thinly sliced
1 green bell pepper thinly sliced
1 small bunch of broccoli cut into flowerets (I generally use a 10 ounce frozen box of flowerets which I open and place on papertowels to thaw and drain)
1 8ounce can of sliced waterchestnuts, drained
3 tablespoons sesame seeds, toasted (I found these at Wal-Mart grocery on a hanging display of all the Mexican spices near one of the endcaps)
Cooked whole grain brown rice
Directions
Sesame Beef Stir Fry
Whisk all the above together in a bowl and marinate the beef strips at room temperature for about 15 minutes while you assemble the following ingredients:
Cooked whole grain brown rice
In a heavy skillet heat the 2 tblsps canola oil. Add the minced garlic, sliced onion, sliced bell pepper and fresh broccoli florets or the well drained and thawed broccoli florets. Stir fry for about 7 minutes over medium heat (not smoking hot) Transfer to another bowl.
To the same skillet add the meat mixture and all the marinade. Stir fry about 2 minutes until pink is gone from meat. Add vegetable mixture back to the skillet with the meat mixture. Drain and add in the sliced waterchestnuts. Sprinkle on the sesame seeds. Cover and turn on low heat for about 5 minutes. Remove from heat, stir well to mix all. Serve over cooked whole grain brown rice.
