Introduction

Ingredients

Ground Beef, 1 pound, browned
corn tortillas, 6", (about 18)
2 C. Colby & Monterey Jack cheese, shredded
1/2 C. Cheddar Cheese, shredded
1 C. Rosarita enchilada sauce
Directions
Brown beef, drain and set aside.
Heat tortillas, to make them easier to roll. (I heat them individually on a cast iron griddle, lightly greased as needed).
Add 1/4 cup enchilada sauce to beef. Spoon about 1 tbsp. meat into each tortilla, roll up and place in casserole dish.
When dish is full, pour remaining sauce over enchiladas and spread with back of spoon to cover each.
Sprinkle cheese over top and place in 375 degree oven for 15-20 minutes or until cheese is melted and enchiladas are heated through.
