Ingredients

    1 lb organic, grass fed ground beef 97/3
    2 slices 100% whole wheat bread, crusts removed
    1/4 cup reduced fat organic milk
    1 large egg
    1/2 cup parmesan cheese, shredded
    1 tbsp basil, chopped
    Salt and Pepper

Directions

Preheat oven to 350 degrees.

Break up the bread into little pieces, place in a bowl and pour milk over. Set aside to soak.

In a bowl, combine the beef, cheese, egg, basil and salt and pepper to taste. Squeeze the excess milk from the bread and crumble it into the beef mixture. Mix thoroughly.

Prepare a sheet pan, line with aluminum foil and spray with cooking spray. Shape the beef mixture into 16-18 meatballs, placing on the baking sheet. Spray the tops with more cooking spray.

Bake for 30 minutes, or until done, flipping halfway through.

Makes about 17 meatballs.
