Ingredients

1 medium eggplant (a little over a pound)
1 T. mayonnaise
2 T. wheat bran
1 oz grated parmesan

Directions
Preheat oven to 350 F. Trim eggplant, leave unpeeled, and slice into half inch rounds. Put on rimmed baking sheet lightly sprayed with Pam. Bake for 15-20 minutes, til tender.
Put a thin coating of mayo on each slice, followed by wheat bran and parmesan, and finally salt and pepper. Broil until browned. Best served hot.
Makes approx 5 servings (2 rounds each).
