Ingredients

10-12 cups thin sliced napa cabbage( 1 head)
half a small head red cabbage( thin sliced)
.5 cups parmesan( grated)
.5 cups egg substitute
2 teas garlic powder
.5 teas black pepper
.33 cups cider vinegar
1 large clove garlic
.75 cups canola or olive oil
lemon juice to taste( 2-3 Tbls)
Directions
*** I use fresh napa cabbage( one large head will give you 12 cups easy!) But you can also use 2-3 bags of the pre made tri color cole slaw mix
Chop on head napa cabbage in half lengthwise. Place each half flat side down and make 2-3 cuts lengthwise then finely slice across the width into thin 1/4 inch strips.
Do the same with half a small head red cabbage- stop before you get to the thick stem part. You need about 1- to 1 1/2 cups total red cabbage.
Blend the 2 cabbages in a large bowl.( or just dump the cole slaw mix from bags)
In a blender mix the egg substitute, oil, vinegar, lemon juice(you need about 2-3 Tbls total), spices and parmesan. Blend until garlic is completely smooth and mixture is thick and white. Pour over the Cabbage and toss to mix.
This is even better the next day!
