Ingredients

    3/4 cup wheat flour
    1/2 cup all purpose flour
    1 cup oat bran
    Any spices desired (cinnamon, cloves, cardamom, etc.)
    1/2 cup sucanat
    1 T BP
    1/2 tsp BS
    1/2 tsp salt
    3/4 c. 8th Continent Original soy milk
    1/4 c. pumpkin puree (or applesauce)
    1 tsp vanilla
    2 very ripe bananas
    1/2 c. chopped walnuts

Directions

1. Whisk together dry ingredients in large bowl.
2. Combine wet ingredients in small bowl, mashing in banana with fork.
3. Add wet to dry ingredients and mix until just combined.
4. Fold in walnuts
5. Pour into muffin tins. Bake at 400 degrees F ~ 20 mins.
