3.25 cups all purpose flour
1 tbsp baking powder
1 tsp ground ginger
0.5 tsp salt
3.4 cup unsalted butter
3 large eggs
1.25 cups granulated sugar
6 oz died appricot
1/3 cup chopped crystallized ginger
Directions
Preheat oven to 350
combine flour, baking powder, salt and gr. ginger in a large bowl
in another large bowl sften to near melted the butter whisk in eggs sugar until smooth
with heavy spoon stir in flour, apricots and crystallized ginger until dough forms
divide dough and form two logs about 14 x 4 inch
bake 25 to 30 mintues until golden brown and wooden pick comes out clean
cool on cookie sheet for 20 minutes reduce oven to 325
transfer log one at time to cutting board and slice into 1/2 think slices lay slice down on cookie sheet and return to oven for 20 to 25 minutes
