Ingredients

16 oz. Morningstar Sausage Cooked, Crumbled
10 Eggs Lightly Beaten (or Egg Beaters)
3 Cups Milk
2 tsp. Dry Mustard
8 oz. (2 Cups) Shredded Sharp Cheddar Cheese
3 Cups Bread Cubed (4 slices 40 calorie bread)
1/2 tsp. Pepper
1 tsp. Salt
1/2 Cup Mushrooms (optional)
1 medium Tomato Chopped (optional --or can of Petite Diced Tomatoes, not salted, juice drained)
1/2 Cup Green Onion, Sliced (optional) -- or Chives
Directions
Preheat oven to 325.
Combine eggs, milk, mustard and salt.
Distribute half the bread evenly in a buttered 9x13 baking dish (or spray with PAM).
Sprinkle with 1/2 pepper, 1/2 cheese, 1/2 sausage and 1/2 of the optional ingredients.
Repeat layering using remaining bread, pepper, cheese, sausage and optional ingredients.
Pour egg mixture evenly over casserole.
Bake uncovered for 55-60 minutes, or until eggs are set.
Tent top with foil if top begins to brown too quickly.
Makes 12 servings.
