Introduction

Adapted form a banana cake recipe on cake mix box. I used apple carrot pulp from juicer for the grated apples and carrots in the recipe. I used olive oil instead of vegetable oil. Ingredients

    1 Pillsbury Sugar Free Yellow Cake Mix
    3 large eggs
    1/2 cup vegetable oil
    1/2 cup water
    2 Tsp. cinnamon
    1/2 tsp. nutmeg
    1 cup grated apples (peeled and cored)
    1/2 cup grated carrot
    1 cup chopped walnuts
    10 tablespoons Smuckers Sugar Free Caramel Syrup

Directions

Preheat oven to 350 degrees F. Mix together everything but caramel syrup. Spread in greased 9X13 cake pan. Bake 34-36 minutes. Cool. Cut into 20 pieces and top each with a 1/2 tablespoon drizzle of caramel syrup.
