Introduction

Number of Servings: 3

Ingredients

    2 cups leeks, well cleaned and sliced thinly (use only up to half of the green parts)
    2 large potatoes, cut into cubes
    1/2 of a small onion, sliced or chopped
    1 tbsp olive oil
    4 cups chicken stock (or vegetable)
    Salt & pepper to taste

    OPTIONAL - 1 cup milk

Directions

Heat olive oil in pot. Cook leeks and onions until soft, but not browned, about 20 minutes. Add potatoes and stock, cooking till potatoes are soft, about 20 minutes. Puree in a blender or using a hand mixer. Salt & pepper to taste. OPTIONAL - you can add a cup of milk once pureed if you want some additional volume or richness.
