Introduction

These are Egg Saandwiches which were a part of my childhood Teas way back in the 1950s and 1960s.Simple to make and tasty, these provide the perfect Evening Snack with a glass of Milk or a cup of Tea---Green or with Milk.The Chilli and Curry Powders add a tangy twist to the otherwise staid taste---you can increase or decrease these to suit your taste---or do away with these altogether---adding a dash of Black Pepper Powder instead!! Ingredients

    FILLING
    2 Fresh Eggs--Jumbo size
    1 large Onion
    1 large ripe red Tomato
    3 tbsps.Alfalfa Sprouts
    2 tbsps.finely chopped Celery
    1tsp.Coriander-Cumin Powder
    1tsp.Chilli Powder
    0.75 tsp.Mustard Powder
    Salt to taste
    OTHER INGREDIENTS
    6 tbsps.Whipped Cream Cheese
    12 slices of Whole Wheat Bread

Directions

PREPARATION
Hard boil the Eggs and shell them.Blanch the Tomato and peel and puree it and strain the Puree to remove the seeds.Peel the Onion and boil it with finely chopped Celery together in a little Water.Add the Tomato Puree and continue cooking on a low flame till all the moisture dries up. Mash the cooked Ingredients together with the Seasonings,Alfalfa Sprouts,finely chopped Coriander Leaves and hard boiled Eggs till well mixed and smooth.Gently whip in the Cream Cheese and mix well.Spread evenly on the Whole Wheat Slices and make six square Sandwiches.Trim off the crusts from all four sides and cut into neat Triangles.Serve as a Snack with Tea.serves 4-6
