This is a very filling low carb breakfast, lunch or dinner. Be sure to drain as much fat off of the chorizo or it'll be a bit rich. Ingredients

6 Chorizo sausage links
Onions, raw, .25 cup, chopped
6 large eggs
1/3 cup low carb 2% hood milk
Cheddar Cheese, 1.5 cup, shredded
Jalapeno Peppers, 1 pepper
Directions
Add chopped onions to Chorizo sausages (remove casing) and cook until done, drain fat.
Fill 9" pie dish with sausage mixture
Mix eggs and low carb hood milk (add salt and pepper to taste)
Pour egg mix over sausage and top with cheese and jalapeno
Bake at 375 for 20-30 minutes or until it is set.
