Ingredients

    3/4 cup steel cut oats, dry
    3 cups water
    Dash of salt
    1 cup canned pumpkin
    1/2 tsp ground cinnamon*
    1/4 tsp ground cloves*
    1/4 tsp ground allspice*
    1/8 tsp fresh grated nutmeg*
    * or use 1 tsp pumpkin pie spice
    1/4 cup chopped pecans
    1/4 cup raisins
    1/3 cup maple syrup, or to taste

Directions

Bring water and salt to a boil and add steel cut oats. When mixture returns to a boil, add spices and slowly stir in pumpkin until mixture is combined thoroughly. Simmer until oatmeal thickens, stirring occasionally. Stir in raisins, nuts, and maple syrup and simmer mixture until all water is absorbed and oats are soft. Serve warm.

Makes 4 generous 1-cup servings. Also refrigerates and reheats well.
