Ingredients

    8 cups homemade turkey stock (made from turkey carcass)
    1.5 cups turkey meat diced (dark meat, no skin)
    3 cups cooked Farro (boiled & drained)
    2 large stalks celery, chopped
    12 baby carrots, chopped
    .5 cup chopped green onion (spring onion)
    1 cup sliced mushrooms
    3 tbsp dried parsley
    1 tbsp dried rosemary
    1 tsp dried thyme
    1 tsp minced garlic
    1.5 tbsp Extra Light Olive Oil
    1 tsp sea salt
    1 tbsp ground pepper
    1 tsp ground sage

Directions

In stock pot, heat olive oil, add celery, carrots, onions & all spices. Saute until soft, add turkey stock. Add turkey meat, farro, and mushrooms. Let simmer for 2-3 hours on low heat.

Makes approximately 8 servings of 1.25 cups.
