Introduction
We had a spiral glazed ham for Thanksgiving....what to do with all that leftover ham? A girl can only eat so many frickin' sandwiches....so I made these! Ingredients

1 10 ounce package frozen chopped spinach, cooked and drained
4 ounces chopped leftover spiral sliced ham
1/2 cup chopped onion
10 large egg whites [fresh egg whites work better for this recipe]
1 cup Kraft 2% Shredded Cheddar Cheese
Directions
Preheat oven to 350 degrees.
On a cookie sheet, prepare 12 foil baking cups and set aside.
In a large bowl combine all the ingredients until well incorporated.
Spoon the mixture into prepared foil baking cups.
Bake in preheated 350 degree oven for 20 to 25 minutes or until knife poked in the center comes out clean as all ovens vary.
Voila! Mini crustless quiche! Yummy for breakfast or brunch or little appetizers!
