Ingredients

    1lb beef sirlion or top round
    1 medium onion
    1 portobello mushroom
    2 cups fresh spinach
    1 can cream of mushroom soup
    1 cup water
    2 tablespoons olive oil

Directions

Heat skillet with 1 tablespoon oil over medium high heat,
add sliced beef and brown (freeze meat for 30 minutes for easier slicing), remove beef and drain fat. Add remaining olive oil and heat over medium, add onion and mushroom and cook until tender crisp, add spinach and wilt. Add can of cream of mushroom soup and 1 cup water. Stir and heat to boiling, add beef back to pan and heat until bubbling. Follow minute rice cooking directions. Put cooked rice on plate and top with mixture.
