Ingredients

    2 cups tortellini filled pasta, either spinach or cheese
    1 tablespoon canola oil
    1 large onion, julienned
    1/2 cup bell pepper strips
    3 cloves garlic, thinly sliced
    1/2 teaspoon salt (or to taste)
    1-2 tablespoons cider vinegar
    1/4 cup heavy whipping cream
    1/3 cup grated parmesan cheese
    1 tablespoon parsley, fine crushed
    1/4 teaspoon salt
    1/4 teaspoon black pepper

Directions

Boil tortellini in salted water until al dente. Drain and set aside.

In a large non-stick skillet over medium-high heat, saute onion and pepper strips in 1-2 teaspoons of the canola oil until sweated. Add garlic and cook until peppers and onions are translucent. Remove to a dish and keep warm.

In same skillet, add remaining oil and pasta and cook until pasta begins to brown. The will happen very quickly. Remove from heat and sprinkle vinegar over pasta. Toss well. Return to a lower heat and add peppers and onion, cream and cheese.

Stir until blended and heated through.

Serve with sauteed conecuh sausage or Chicken spinach sausage or fresh grilled shrimp.

    I absolutely loved this recipe and so did my husband. I used 1/2 cup half and half instead of 1/4 cup heavy cream and it came out great. When I heat it up again for leftovers, I will add a little bit more half and half to make it creamy. - 2/9/08

    I like this recipe. I used milk rather than cream and cut back on the vinegar and substituting it with apple vinegar. - 2/11/08
