Introduction
This is another great recipe to start before heading out for the day, I serve it with rolls or texas toast. One serving is half a breast with a quarter portion of the veggies. Ingredients

2 boneless skinless Chicken Breasts
1 onion, peeled and cut in half
3 large carrots, peeled and chunked
2 large potatoes, scrubbed and chunked
3 stalks celery, chunked into 2 inch pieces
2 cups chicken broth or bouillon cubes in water
1 tsp rosemary
1 tsp poultry seasoning
Cracked pepper to taste
Directions
1. Place chicken breasts in crock pot, and poke holes randomly to allow seasonings to penetrate.
2. Add potatoes, carrots,celery and onion and pour chicken broth on top
3. Sprinkle with seasonings, adding any to suit your taste as well
Simmer on low for about 3-4 hours until chicken is tender, I leave mine while I go to work for five hours and it turns out great everytime. :)
Makes 4 Servings of a half chicken breast and portion of vegetables. Enjoy!
