This is another great recipe to start before heading out for the day, I serve it with rolls or texas toast. One serving is half a breast with a quarter portion of the veggies. Very easy to modify or throw together with stuff in the fridge!
This works well with frozen chicken breasts. Just place them in a freezer bag with the marinade and let them thaw in your fridge. They marinade and thaw at the same time. The marinade is poured off the chicken making the cals on this even lower.
This was supposed to be a MOCK Pasta Fagoli but I forgot to add the pasta. Keeps the carbs low in the end. This is a wonderfully hearty soup and sodium content was kept low with the chicken broth instead of a bullion cube.
